Steak is delicious. Salad is healthy. Now… if only we could make something that's delicious and tasty. WAIT! WE HAVE AN IDEA! 

Stuff you’ll need: (feeds 4)

 600g grass-fed beef rump steak. 
A handful of mixed leaves
Zest and juice of three lemons
2 x tbsp pine nuts, toasted in a dry pan
1 x cup parmesan, shaved
The best olive oil you can afford
Sea salt
Black pepper, freshly cracked 

What you’ll do: 

1. Rub the steak with olive oil and season aggressively with sea salt. 
2. In a hot pan, cook the steak for 3 - 4 minutes per side, turning often. Remove and allow to rest. 
3. Meanwhile, tip the leaves into a deep bowl. Add the pine nuts, lemon juice and a good glug of olive oil. Season with salt and pepper, tasting as you go. Using your hands, toss everything together to combine, being gentle but thorough. (You don’t want to bruise the leaves). 
4. To serve, slice your steak into thin pieces and arrange on plates. Top with leaves. As a garnish, sprinkle over parmesan and finally finish with lemon zest and a small extra drizzle of olive oil.
