Bacon. What more is there to say? Well, quite a bit actually. Our Christmas interpretation of mankind’s favourite meat involves using Christmas spices (cinnamon, nutmeg, cloves, sage etc.) in the bacon curing mix and then smoking the slabs of pork belly. It’s an amazing, rich flavour that lends itself to pretty much anything.
